Rick Lane's Bold and Buttery Pasta

This super easy to make dish is a creamy, buttery, and slightly spicy twist on a classic pasta night. Packed with bold flavors and a little heat from Give Me Some (Spicy) Sugar seasoning, this recipe is easy enough for a weeknight dinner but rich enough to impress. Whether you're cooking for yourself or making a meal to share, this pasta is guaranteed to hit the spot!

Ingredients

  • 12 oz penne pasta (or pasta of your choice)
  • 2 tbsp salt (for pasta water)
  • 2 tbsp olive oil
  • ½ onion, finely chopped
  • 1 tomato, diced
  • 2 cups fresh spinach
  • 1 tbsp Give Me Some (Spicy) Sugar seasoning (plus more to taste)
  • 1 ½ cups heavy cream (adjust for desired creaminess)
  • 1 tsp chicken bouillon powder (plus more to taste)
  • ½ cup grated Parmesan cheese (plus more to taste)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook until al dente (follow package instructions for timing).
  3. Drain and set aside, reserving ½ cup of pasta water in case you need to loosen the sauce later.

Step 2: Sauté the Veggies

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and sauté until soft and translucent (about 3 minutes).
  3. Toss in the tomatoes and spinach, stirring occasionally until the spinach wilts.
  4. Season with Give Me Some (Spicy) Sugar to bring out the flavors.

Step 3: Make the Bold and Buttery Sauce

  1. Reduce heat to medium-low and pour in heavy cream.
  2. Sprinkle in chicken bouillon powder and stir to combine.
  3. Add another dash of Give Me Some (Spicy) Sugar for an extra kick.
  4. Simmer for 1-2 minutes, stirring occasionally until the sauce thickens slightly.

Step 4: Combine & Serve

  1. Add the cooked pasta to the skillet and toss everything together.
  2. If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
  3. Taste and adjust seasoning with more Give Me Some (Spicy) Sugar, if desired.
  4. Finish with a generous sprinkle of grated Parmesan cheese and serve hot!
